Healthier Peanut Butter Cups

We all get cravings from time to time, even if we are living a health oriented lifestyle. Chocolate is something most people crave! Milk chocolate is not healthy, and has elevated levels of sugar and fat. There is barely any actual cocoa in milk chocolate. Dark chocolate, however, is one of the best sources for antioxidants available. It does not have the added sugar and fats, making it a much healthier alternative. Dark chocolate can even improve health while lowering the risk of heart disease! Not many tasty foods can say that. Store bought peanut butter cups rarely use dark chocolate. When they do, you can still read the ingredients label and end up confused. If you want to have a sweet but don’t want all the extra ingredients, make your own healthier peanut butter cups recipe at home!

Ingredients

  • 1/3 cup Organic, All Natural Peanut Butter
  • 1/4 cup Organic Coconut Oil
  • 1/2 cup Organic Dark Chocolate Cocoa Nibs
  • 4 tablespoons Organic Honey
  • Silicone mold tray (peanut butter cup shapes or round shapes work best)

Directions

  1. Take half of your cocoa nibs, coconut oil, and honey and melt using a double boiler on low-medium heat. Make sure to stir often!
  2. Remove from heat, and pour into your molds. Make sure to put an even amount of the mixture in each mold.
  3. Place in the fridge to set for about 30 minutes.
  4. Remove your molds, and set them out in room temperature.
  5. Using a spoon, spread the peanut butter evenly in all of your molds, on top of your hardened chocolate mixture.
  6. Using the double boiler method once again, melt together the rest of your coconut oil, cocoa nibs, and honey.
  7. Remove from heat, and pour over your existing chocolate and peanut butter in the molds.
  8. Set in the fridge for another 30 minutes.
  9. Gently remove from the molds, and store in a sealed Tupperware container.

Voila! Now you have all natural, healthier peanut butter cups to enjoy at home. They use naturally occurring sweetness, and are full of good fats and antioxidants.
