It can be challenging to find a snack or breakfast item that is not only healthy, but tastes great too. If you have children or grand children to make breakfast for, it can become even more of a challenge. You need a simple recipe that tastes great and has wholesome ingredients. If you’re ever stuck on what to make, try making these Mini Banana Muffins! They’re delicious, and take very little time to prepare and bake.

Ingredients

  • 1 cup Organic or Whole Wheat Flour of your choice
  • 1/4 cup Organic Coconut Oil (melted)
  • 2 Eggs
  • 2 Large Ripened Bananas (mashed with a fork in a separate bowl)
  • 1 Tsp Baking Soda
  • 1/4 Cup Honey
  • 1/2 Tsp Organic Vanilla Extract
  • Optional – 1/4 cup Cacao Nibs

Instructions

  • Pre-heat oven to 350 degrees Farenheit .
  • Grease a mini muffin pan with Coconut Oil.
  • In a large mixing bowl, add in your dry ingredients and mix well.
  • Mix in your mashed bananas with your dry ingredients. (some clumps of bananas are okay!)
  • Add in wet ingredients one at a time and mix well in between each added wet ingredient.
  • Add Cacao nibs last, if desired and mix well one last time.
  • Pour your mixture into the mini muffin pan.
  • Bake for 10-13 minutes, until a tooth pick comes out clean when checked.
  • Let cool for 10 minutes before eating.

Not only are your Mini Banana Muffins a treat, they are much healthier than your standard muffin! This recipe uses simple ingredients, and the sweetness is naturally occurring instead of coming from granulated sugar. Don’t worry if your recipe has some clumps of bananas – it only makes it even more delicious! If you would like to freeze these muffins, just pop them in a freezer safe container and de-thaw for several hours before eating. If they are not frozen, they will be good for 4-6 days when stored in a sealed container after baking.
