Fudge always reminds me of the holiday season. Growing up, my mother always made fudge for neighbors, the mail person, the trash collectors, as well as friends and family.

It’s a treat I love… a bit too much. It’s hard to eat just one piece of fudge! Over-doing it is easy, especially during the holidays. When someone makes an extra special treat to bring to the table, it sits there waiting for you to eat it!

It uses coconut oil, which has healthy fats and all sorts of benefits. Cocoa has naturally occurring antioxidants, and research tells of all kinds of benefits cocoa has to offer. This treat is delicious, healthier, and doesn’t leave you feeling guilty for grabbing that second – or third – piece.

How to make it

  • Using a double boiler on low heat, fully melt the coconut oil.
  • Turn the heat off, and fold in the coconut milk and maple syrup.
  • Add in the cocoa powder or nibs, stirring to melt them in the mixture.
  • Finally, add the vanilla and peppermint extract.
  • Use a hand mixer to fully blend all ingredients.
  • Line your baking dish with parchment paper, and pour the mixture on top.
  • Put your dish in the fridge for 3-4 hours.
